Red and Black Bean Soup
This should be good when the weather cools off:
1 Tbs vegetable oil
1 1/2 cups chopped onion
1 1/4 cups sliced carrots
2 cloves garlic, minced
3 cups broth
1 (16 ounce) package frozen corn
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can black beans, rinsed and drained
1 (14.5 ounce) can Italian-style stewed tomatoes
1 (14.5 ounce) can diced tomatoes, drained
1 (4 ounce) can diced green chiles
Put everything into a crock pot and cook on HIGH for one hour, then turn temperature to LOW and cook for seven hours. Should serve 10 normal people or 5 starving people.
