A Safe way to make popcorn in your microwave

Some people avoid commercial microwave popcorn bags because they may have silicone in them. But hot air poppers can be a bother to use. It seems that there is another way to use your microwave to make popcorn:

Put 3 tablespoons of unpopped popcorn in a brown paper lunch bag. Roll down the top and put in the microwave for about two minutes. But make sure to watch and smell because every microwave cooks a bit differently. If you want, you can put some butter spray on it after it is popped so the salt sticks better, but read the label of the spray first to check ingredient information.


Crockpot Green Chile Grits for my son

This sounds interesting, yet easy. I hope he likes it:

2 cups regular grits
6 cups water
1/2 to 1 tsp salt
4-6 ounces chopped mild green chiles
1 or more jalapeƱo chiles — seeded, chopped fine
1 dash cayenne

Combine all ingredients in the crockpot and cook on LOW
for 6 to 9 hours or on HIGH 2 to 3 hours, stirring
occasionally. If cooking on high, add 1/4 to 1/2 cup more
water if too thick.


Red and Black Bean Soup

This should be good when the weather cools off:

1 Tbs vegetable oil
1 1/2 cups chopped onion
1 1/4 cups sliced carrots
2 cloves garlic, minced
3 cups broth
1 (16 ounce) package frozen corn
1 (15 ounce) can kidney beans, drained and rinsed
1 (15 ounce) can black beans, rinsed and drained
1 (14.5 ounce) can Italian-style stewed tomatoes
1 (14.5 ounce) can diced tomatoes, drained
1 (4 ounce) can diced green chiles

Put everything into a crock pot and cook on HIGH for one hour, then turn temperature to LOW and cook for seven hours. Should serve 10 normal people or 5 starving people.


Chicken Tacos

1 lb. boneless, skinless chicken breasts
1 package taco seasoning
3/4 cup water
1 large tomato
2 cups shredded reduced fat cheddar cheese
4 cup shredded romaine lettuce
8 baked taco shells (or tortillas)

Grill chicken breasts on grill. Cut into strips or cubes, and combine with water and taco seasoning in skillet and bring to a boil. Simmer and stir until desired consistency is reached. Heat taco shells according to directions on package, but plain corn tortillas have fewer calories than prepared taco shells. Dice tomatoes, shred cheese, and shred lettuce. Divide chicken mixture into the 8 taco shells and top with tomatoes, etc, as desired.

Each taco has 183 calories
